ISO: Welbilt 350-3 timer question

Does anyone know about the Welbilt 350-3. I have determined that it makes a one-pounder, but setting the timer is weird. The only thing I have succeeded in doing is setting the crust to Med. After the initial mix and knead, the beeper goes off and won't stop. I have to actually unplug it and start again. Repeat on Med. setting, more beeping and unplugging, and the third time when I hit Med. it will bake with 2:10 on the timer. This CAN'T be right. Also, how do you remove the paddle from the loaf? I almost destroyed mine when I sliced it with the bread knife! Gina
