Doc's Pasta Chi-Chi
cup chopped celery
cup chopped carrots
2 Tablespoons olive oil
3 cloves minced garlic
2 cup chicken stock (homemade recommended
1 can (16 ounces) garbanzo beans
cup ditilini (tiny tube pasta)
Freshly grated Parmesan
Fresh Italian bread
Brown celery and carrots in olive oil, add garlic and stir so it doesn't burn. Put in the stock and the beans; then add the ditilini, and cook for 5 minutes. Pour into bowls, grate fresh Parmesan over the soup and serve with some good, fresh Italian bread. Makes 4 servings.
