Easy Banana Bread
4 eggs
1 box banana cake mix, without pudding
1 small box banana instant pudding
1 cup water
1/4 cup oil
3 bananas, mashed
1/2 cup chopped walnuts or pecans
Beat eggs at medium speed with an electric mixer until thick and pale; add cake mix, pudding, water and oil. Mix well. Stir in bananas and walnuts. Pour batter into 2 greased and floured small loaf pans. Bake at 350 degrees for 1 hour or until a wooden pick comes out clean. Cool in pans 10 minutes. Turn out on racks and cool completely. Better second day.
