Eggnog Bananas Foster
1 tablespoon butter
4 firm bananas, peeled, cut in half lengthwise, then in half crosswise
3/4 cup eggnog
3 Tablespoons dark rum or brandy
In a large, preferably nonstick skillet over high heat, melt butter.
Add bananas cut side down. Cook 60 to 90 seconds until lightly browned on bottom.
Add eggnog and rum. Boil for 30 seconds. Remove from heat.
Place 4 pieces of banana on each serving plate. Spoon sauce on top.
Makes 4 servings
