ELECTRIC SKILLET ORANGE THYME GLAZED CORNISH GAME HENS
3 tbsp. vegetable oil
1/2 cup orange marmalade
3 tbsp. orange juice
1 tbsp. lemon juice
1 1/2 tsp chopped fresh thyme
2 cloves garlic minced
Salt and pepper to taste
3 Cornish game hens
1 lb. green beans
Turn skillet to 325 degrees F. Combine oil, marmalade, orange juice, lemon juice, thyme, garlic, salt and pepper in small bowl.
Season hens inside and out with salt and pepper and brush on half of the glaze. Place hens in skillet breast side down and cook for 15-20 minutes until breasts are browned to perfection.
Turn hens over and brush half of remaining glaze. (Turn skillet down to 300 degrees F if necessary.)
Add green beans after 7 minutes. Brush on remaining glaze and cook an additional 10 to 15 minutes or until internal temperature of hen reaches 180 degrees F. Season as desired and garnish with additional fresh thyme.
