FABULOUS FRUIT PIZZA
Source: Desert Cookery Cookbook
FOR THE ORANGE GLAZE:
1 cup orange juice
1/2 cup water
1/2 cup granulated sugar
2 Tablespoons cornstarch
Dash of salt
FOR THE PIZZA:
1 (17-ounce) package (roll) refrigerated sugar cookies
1 (8 ounce) package cream cheese, softened
2 teaspoons vanilla
1/2 cup granulated sugar
3 to 4 bananas, sliced*
4 to 6 peaches, sliced (fresh or canned)*
2 cups sliced strawberries*
Whipped cream (optional)
TO MAKE THE ORANGE GLAZE:
Combine all glaze ingredients in a saucepan and bringing to a boil over medium heat. Continue cooking for two minutes. Cool.
TO MAKE THE PIZZA:
Preheat oven to 350 degrees F.
Slice cookies 1/4-inch thick and place slices on an oiled pizza pan to form crust. Do not overlap cookies, as they will spread during baking.
Bake for 15 minutes; watch carefully so they don't burn. Remove from oven and cool in pan.
Mix cream cheese, sugar, and vanilla; spread over cooled cookie crust. Cover cream cheese mixture with sliced fruit, arranging decoratively as desired.
Cover fruit completely with cooled orange glaze and refrigerate pizza.
*Any seasonal fruit may be substituted. I use kiwis, halved seedless grapes & canned mandarin orange slices in addition to the bananas, peaches and strawberries.
Cut in wedges and serve with whipped cream, if desired.
Makes 8 servings.
I usually have sliced fruit and glaze left over when I make this recipe. I just combine the leftover fruit and glaze, toss in some mini marshmallows and serve as fruit salad. Yum!
