Five Cup Salad and Sour Cream Fruit Salad
From: J. Helman
Newsgroup: rec.food.recipes
Both of these recipes come from my late mother's recipe files. The second one seems to be her variation on five-cup salad. They both use sour cream, not cottage cheese.
Five Cup Salad
1 cup sour cream
1 cup miniature marshmallows
1 cup canned fruit cocktail, drained
1 cup canned pineapple tidbits, drained
1 cup frozen strawberries, drained, OR 1 cup canned mandarin orange
slices, drained, OR both, if desired
Mix all ingredients and chill a few hours.
Sour Cream Salad
8 ounces sour cream (low fat or fat free is all right)
2 cups mini-marshmallows
1 large can pineapple chunks (I use a 20-ounce/567-gram can)
Assorted fresh fruits cut into slices or chunks -- bananas, peaches, plums, strawberries, melons, apples, pears, whole seedless grapes, tangerine wedges
(Including pineapple, use a total of 8 cups of fruit)
Put the fruit in a large bowl. Add the mini-marshmallows, then add about half of the sour cream. Mix it up and add more sour cream until you reach the consistency you want. The fruit should be well-coated by the sour cream, but the sour cream shouldn't completely cover all of the fruit.
