Tortellini Salad

Serves 4 (or two adults and two children, plus leftovers)
2 (9 oz) packages frozen tortellini
1/2 cup olive oil
1/2 cup lemon juice
1/4 cup freshly grated parmesan cheese
1/2 cup parsley
salt and pepper to taste
6-8 leaves red leaf lettuce
Cook the tortellini according to package directions. Drain. Rinse with cold water. Drain again.
Mix the remaining ingredients (I use an immersion blender). Toss with the tortellini. Chill. Serve on lettuce-lined plates.
