My dad used to make a salad with cooked white rice, those tiny shrimp you buy frozen at the grocery, cucumber and lime juice and zest. Maybe tomatoes, onions, green bell pepper. A good hot weather meal.
My mom makes tons of pasta salads, mostly with pesto or sun-dried tomato pesto purchased at the grocery store. Also bean salads, using kidney beans, or my favorite, small white beans from S&W (they don't seem to be sold out here in DC, but we got them in Calif all the time). Add onion, leftover meat, basil, cilantro, or parsley, often leftover corn cut from the cob, roasted red peppers, etc.
In the most recent issue of Gourmet there's a recipe for rice and black bean
salad with shrimp and citrus dressing, it looks very good.
I think if you start with a base of canned beans, cooked, cooled rice, or cooked pasta and then add whatever you like and a good dressing, you can come up with a lot of ideas. Especially if you use "themes" like Chinese, or Japanese, Greek, or Southwestern.
