Mustard Shrimp in Potato Nests
Makes 5 main-dish servings
12 oz. shrimp, peeled
2 tbsp olive oil
1/8 tsp. dried dillweed
1-1/2 cups refrigerated shredded has brown potatoes
1/4 cup soft breadcrumbs
2 tbsp thinly sliced green onion
1 slightly beaten egg
2 tbsp horseradish mustard
2 tsp. olive oil
1/2 tsp. finely minced garlic
1/8 tsp. ground cayenne pepper
nonstick cooking spray
3 tbsp light mayonnaise
1 tbsp dry white wine (or water)
tsp. dried dillweed
Toss shrimp with 2 tbsp olive oil and 1/8 tsp. dillweed and set aside.
In a large mixing bowl combine potatoes, soft breadcrumbs, green onion, egg, 1 tbsp of the horseradish mustard, the 2 tsp. oil, garlic, and red pepper. Spray a baking sheet with nonstick coating.
For each potato nest, pat 1/3 cup of the potato mixture into a thick patty on the baking sheet. Depress the center of each patty with the back of a spoon, forming a next shape about 4 inches in diameter.
Bake in a 425F oven for 10 minutes. Spoon shrimp filling in center and bake for 12-15 minutes more or till crust is golden and shrimp are cooked through. Remove from the oven and let stand for 5 minutes.
Meanwhile, in a small mixing blow combine mayo, remaining mustard, wine and the 1/2 tsp. dillweed. Spoon sauce over each filled shell. Top with fresh dill, if desired.
