Recipe: Fried Green Tomatoes (two ways)

Fried Green Tomatoes (two ways)

Here's a relatively easy fried green tomato recipe--it is pretty similar to the way I make zucchini and eggplant
.
The quantities here are for about 8 medium-size tomatoes

Cut and pat dry your tomatoes. Set aside and let air dry for about 1/2 hour.

Using 1 medium-size bowl and 2 flat dishes, place:

In bowl:
1 egg
2 egg whites
1/4 cup water
salt and pepper

In flat dish #1:
1/2 cup flour seasoned with garlic powder

In flat dish#2:
3/4 cup of seasoned bread crumbs (Italian)

After tomatoes are relatively dry, dip in this order:
flour, egg, crumbs.

Fry in heated olive oil in heavy skillet.

Serve as is or use some the ideas listed below:

- Layer with mozzarella cheese, bake 30 minutes

- Make an omelet with fried tomatoes, provolone cheese, sausage (great!)

- Layer with tomato sauce, ricotta cheese, bake 30 minutes

- Make a basic white sauce (sometimes I make Alfredo), pour over pasta and add tomatoes

In skillet with heated olive oil, fresh garlic add the following:
4 medium green tomatoes, diced
1 small onion, sliced
3 hot banana peppers, cut up
Season with salt and Pepper

I use this as a side dish for to throw over a lettuce salad or to make a Fried Green Tomato pizza--as follows:

Pizza Crust--brush with olive oil and garlic
Spread tomato mixture evenly over crust
Sprinkle with a good grated parm/romano cheese, grated provolone
Bake for about 20 minutes. This is really a crowd pleaser too!
