Recipe: Herb-Baked Tomatoes

Herb-Baked Tomatoes

3 medium tomatoes -- cut into wedges
Vegetable cooking spray
1/3 cup whole wheat breadcrumbs
1 tablespoon fresh parsley -- chopped
2 teaspoons margarine -- melted
1/4 teaspoon garlic powder
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
1/4 teaspoon pepper

Arrange tomato wedges in a 10 x 6 x 2-inch baking dish coated with cooking spray.

Combine remaining ingredients in a small bowl, stirring well; sprinkle over tomatoes.

Bake, uncovered, at 425F for 5 minutes or until tomatoes are thoroughly heated and topping is lightly browned. Serve hot.
