Recipe: Sweet Potato Casserole

Side Dishes - Potatoes
Sweet Potato Casserole

5 medium-size sweet potatoes, peeled, cooked, and mashed
1/3 cup milk
3 tablespoons light brown sugar
2 tablespoons sugar
2 tablespoons butter or margarine, melted
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 cup miniature marshmallows

Combine all ingredients except marshmallows, mixing well. Spoon into a lightly greased 1 1/2 quart casserole. Cover and bake at 375 degrees for 30 minutes. Uncover, sprinkle with marshmallows, and bake an additional 5 minutes. Makes 4 servings.
