Frozen Mashed Potatoes

I have started making extra mashed potatoes on purpose when I found they freeze really well. I put them in a muffin tin (sprayed with cooking spray) then, when they're frozen, pop them into a ziplock baggie and keep them in the freezer.
They reheat in the microwave quickly; sometimes I add a little more butter, vegetable broth or yogurt as they heat. It sure is nice to have homemade mashed potatoes those nights we're really rushed!
