Recipe: Hawaiian Waffles with Pineapple and Coconut (Metric and US Standard)

Breakfast and Brunch
Hawaiian Waffles with Pineapple and Coconut (metric)
Serve with sliced banana and pure maple syrup.
Servings: 4

Ingredients:
155 g sifted all-purpose flour
5 g white sugar
3 g baking powder
1 g baking soda
2 g salt
1 egg yolk
230 g sour cream
60 ml coconut milk
115 g chopped fresh pineapple70 g unsalted butter, melted
2 large egg whites, beaten

Directions:
1. Preheat a lightly greased waffle iron.
2. In a medium bowl, sift together flour, sugar, baking powder, baking soda and salt.
3. In a separate medium bowl, mix egg yolk, sour cream, coconut milk, pineapple and butter. Thoroughly mix in the flour mixture. Gently fold in egg whites.
4. Pour the mixture into the prepared waffle iron, and cook until golden brown.
