Recipe: Hunt's Florentine Meat Roll (stuffed meat loaf using ricotta cheese)

HUNT'S FLORENTINE MEAT ROLL

2 pounds lean ground beef
1 cup fine soft bread crumbs
2 eggs
Salt and ground black pepper to taste
1 (15.25 oz) can Hunt's Family Favorites Seasoned Tomato Sauce for Meatloaf (or tomato/spaghetti sauce), divided use
1 (10 oz) bag frozen chopped spinach, thawed and squeezed dry
1 (8 oz) container ricotta cheese

Preheat oven to 400 degrees F.

Combine and mix ground beef, breadcrumbs, eggs, salt, pepper and half the sauce. On waxed paper, shape meat mixture in a rectangle, 1/2-inch thick.

Combine and mix spinach and ricotta cheese. Spread mixture over entire meat surface. Starting with short end, roll up in jellyroll fashion. Place in shallow baking dish.

Bake 45 minutes; drain. Pour remaining tomato sauce over meat roll and bake 10 minutes longer.

Makes 6 servings
