PASTA WITH ARTICHOKES AND PIMIENTO
3 tablespoons olive oil
2 cloves garlic, minced
3 jars (6 ounces each) marinated artichokes, drained, coarsely chopped
1 (4 ounce) jar pimiento strips
1/4 cup chopped fresh parsley
1/3 cup grated Parmesan cheese
4 1/2 cups hot cooked spaghetti or flat noodles
Heat olive oil in a 12-inch skillet over medium heat. Add garlic and saute 1 minute.
Add artichokes, pimiento strips, and parsley. Saute 2 minutes.
Toss artichoke mixture and Parmesan cheese with hot pasta. Serve immediately.
Makes 4 servings
