Jumbo Shrimp Stuffed with Seafood Dressing

24 jumbo shrimp
salt & pepper to taste
2/3 cup cracker meal
2 eggs, beaten
1 pint fat for deep frying
1 Tbsp. Seafood Dressing (see recipe below)

Clean shrimp, devein and cut open along back until shrimp lies flat. Season with salt and pepper. Place about 1 Tbsp. stuffing in open end of each shrimp. Roll each in cracker meal, then in beaten eggs, then in cracker meal again. Fry in 375-degree fat until golden brown.

Seafood Dressing Recipe

2 Tbsp. vegetable oil
1 large onion, finely chopped
1 rib celery, chopped
1 garlic clove, minced
1/4 cup bell pepper, chopped
2 cups crab meat - preferably white
2 Tbsp. chopped green onions
2 Tbsp. parsley
1/2 tsp. salt
1/8 tsp. cayenne pepper
1/8 tsp. black pepper
2 eggs, slightly beaten
flour as needed

Melt fat in a large skillet over medium heat. Add onion, celery, garlic, and bell pepper and reduce heat to low; cook stirring, until onions are clear. Add crab meat, green onion, parsley and seasonings; cook slowly about 3 minutes. Remove from heat. Add eggs and about 4 Tbsp. flour and stir well. Add a little more flour if dressing doesn't hold together.
