MACADMIA NUT CRUSTED HALIBUT WITH BANANA BUTTER
2 (7 oz.) portions fresh halibut
2 tablespoons, finely chopped macadamia nuts
1 tablespoon all purpose flour
1/2 cup, finely chopped bread crumbs
3 tablespoons olive oil
salt and pepper to taste
BANANA BUTTER:
2 freshly sliced bananas
1 teaspoon pernod
1 tablespoon olive oil
3 tablespoons cr me de banana liqueur
1/4 cup heavy cream
4 tablespoons butter
Make macadamia crust a few days ahead of time, it will dry out the macadamia nut. To make crust use nuts, bread crumbs and flour. You want a real light crust.
Saute crusted halibut in saute pan for about 1 1/2 to 2 minutes. On one side, flip and place in oven for 4 to 7 minutes. Until done.
Place a pool of banana butter on plate, place halibut on top. Serve with your choice of starch and vegetable. Garnish with banana chips.

Add liquor and reduce by half. Make sure to stir, so that it doesn't burn.
Add cream. Simmer for 10-15 minutes. Remove from heat. Slowly add butter.
