Recipe(tried): Mallow-Date Roll - Debbie, this is one of my Dad's favorites

MALLOW-DATE ROLL

3 cups fine graham cracker crumbs, divided use
1 1/2 cups pitted dates
1 cup chopped walnuts
4 cups mini-marshmallows or 1/2 lb. large (about 32) cut in pieces
1 (9-oz.) can (1 cup) crushed pineapple with syrup
Maraschino cherries
1/2 cup heavy (whipping) cream
whipped cream (for serving)

Reserve 1/2 cup crumbs. Mix remaining ingredients (including pineapple syrup) except cream together. Add cream and mix well.

Spread reserved crumbs on waxed paper. Turn out date mixture onto crumbs. Shape in long 3 1/2-inches in diameter roll. Cover outside with crumbs. Wrap in waxed paper. Chill overnight.

Cut into 3/4-inch slices. Top slices with whipped cream.

Makes 8 to 10 servings
