Maple Pecan Muffins with Maple Glaze
rec.food.baking/Johnson (1999)
Makes 12 muffins
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 beaten egg
3/4 cup milk
1/3 cup cooking oil
1/3 cup maple syrup or maple-flavored syrup
1/2 cup chopped pecans
1/2 cup sifted powdered sugar
1 tablespoon maple syrup or maple-flavored syrup
Grease twelve 2 1/2-inch muffin cups. Set muffin cups aside. In a bowl stir together all-purpose flour, whole wheat flour, baking powder, baking soda, and salt. Make a well in the center of the dry mixture. In a medium mixing bowl combine egg, milk, cooking oil, and 1/3 cup syrup. Add egg mixture all at once to dry mixture. Stir just till moistened (batter should be lumpy). Fold in chopped pecans. Spoon batter into the prepared muffin cups, filling each 2/3 full. Bake in a 400 F oven about 20 minutes or till done. Transfer muffins from muffin cups to a wire rack.
In a small bowl combine powdered sugar, the 1 tablespoon syrup, and 1 teaspoon water; drizzle over muffins. Cool slightly before serving.
