Spiced Apple Muffins

Makes 12-16 muffins
2 cups all-purpose flour (half whole wheat if desired)
3-1/2 tsp baking powder
1/2 teaspoon salt
1/2 cup granulated sugar
1 cup chopped peeled apple
1 egg, lightly beaten
1 cup milk
1/3 cup melted butter or shortening
TOPPING
2 tablespoons brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
In large bowl, mix together flour, baking powder, salt and sugar. Stir in chopped apple. In separate bowl, combine egg, milk and melted butter. Add to dry ingredients, stirring just until moistened; do not over-mix. Spoon into greased or paper-lined muffin cups, filling three-quarters full.
Topping: Combine sugar, cinnamon and nutmeg; sprinkle over muffins.
Bake in 400F oven for 15 to 20 minutes or until golden.
