Oat and Wheat Bran Muffins with Dried Apricots

Makes 12 muffins
1/4 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup wheat bran
1/2 cup oat bran
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
pinch nutmeg
2 ripe bananas
1 egg
1/2 cup buttermilk or low-fat yogurt
1/4 cup vegetable oil
1/2 cup brown sugar
1/2 cup chopped dried apricots
In large bowl, combine all-purpose flour, whole wheat flour, wheat bran, oat bran, baking powder, baking soda, salt, cinnamon and nutmeg. Stir well. In separate bowl, mash bananas and whisk in egg, buttermilk, oil and sugar. Stir liquid ingredients into dry ingredients just until combined. Mix in dried apricots. Spoon batter into 12 non-stick or paper-lined muffin cups and bake in preheated 375:F oven for 20 to 25 minutes.
