1/2 cup sugar
1/3 cup vegetable oil
1 egg
1 teaspoon grated orange peel
1/2 cup orange juice
2/3 cup flour
1/2 cup quick-cooking oats
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon cinnamon
1 cup chopped fresh orange pieces
Combine sugar, oil, egg, orange juice and peel. Beat until light.
Add flour, oats, baking powder, soda, cinnamon and orange pieces.
Beat until smooth.
Pour into lightly greased 9-inch round microwave-safe cake pan; spread batter evenly.
Microwave, uncovered, 50% (Medium) for 8 to 9 minutes, or until edges are set.
Rotate dish twice while cooking.
Microwave on High for 2 1/2 to 3 minutes or until center is no longer doughy.
Rotate dish once while cooking.
Serve warm or cold, dusted with powdered sugar, if you like.
