Title: Papa Haydn's Chicken Salad with Peanut Sauce

Makes 3 to 4 servings

2 pounds chicken breast
10 cloves garlic, peeled
2/3 bunch fresh cilantro
1/2 cup unsalted crunchy peanut butter
1/2 cup soy sauce
5 TBL granulated sugar
1/2 tsp. dry sherry
1 TBL hot chili oil.

Poach chicken breasts for 20 minutes.
Cool, skin and debone.
Cut in julienned strips and place on individual beds of lettuce.

In food processor, mince garlic and cilantro, add peanut butter, soy, sugar, sherry and hot oil. Process until smooth (yields about 1-3/4 cups).

Serve on the side of the chicken breasts.
