I made this Chili last night and it turned out really delicious so I thought I would share.
When I went to the market I found the first Manila mangoes (my favorite!) of the year for 89 cents each so I snatched them all up and ate this chili with baked corn chips, grated low fat cheese, chopped cilantro and a bowl of fresh mango peices. DELISH!
Turkey Chili with White Beans
1 T. veg. oil
2 medium onions, chopped
1 1/2 t. dried oregano
1 1/2 t. ground cumin
1 1/2 pounds lean ground turkey
1/4 cup chili powder
2 bay leaves
1 T. unsweetened cocoa powder
1 1/2 t. salt
1/4 t. cinnamon
1 28-oz. can tomatoes
3 cups beef broth
1 8-oz. can tomato sauce
3 15-oz. cans small white beans, rinsed and drained
Heat Oil in large pot over medium heat. Add onions and saute for 10 minutes. Add oregano and cumin,
stir around to blend then increase heat to med-high and add ground turkey and cook until no longer pink,
breaking up with the back of a spoon. Stir in chili powder, bay leaves, cocoa powder, salt and cinnamon.
Add tomatoes with their
juices breaking up with the back of a spoon. Mix in stock and tomato sauce. Bring to a boil. Reduce
heat and simmer for 45 minutes stirring occasionally.
Add beans to chili and simmer another 10 minutes for flavors to blend. mmmmmm-mmmmmmm
