Recipe: Mystery Lemon Wafers
Misc.Hi, Terry, TX,
I, too am addicted to Diane Davidson's books -- mostly for the food talk, and I do thank her heartily for always including the recipes! Here is one that is absolutely delicious (don't remember which book it is from):--
LEMON BUTTER WAFERS
3/4 cup unsalted butter ( 1 1/2 sticks)
1 cup sugar
2 large eggs
1 1/4 cups sifted flour
2 Tblsp. very finely minced lemon zest
1/3 cup ground almonds
In the large bowl of electric mixer, beat butter until smooth and add sugar, beating until creamy. Beat in the eggs, scraping down the sides of the bowl. Add the flour, beating just until combined. Stir in the lemon zest and almonds until well combined. Cover and chill at least three hours.
Preheat oven to 350 degrees. Butter cookie sheets and spoon out level 1/2 tablespoon amounts of the dough, 3 inches apart. Bake 10 minutes or until cookies have flattened and are lightly browned around edges. Cool on racks and store in covered tin.
