Recipe(tried): Noodles and Cheese Times Three

Main Dishes - Casseroles
NOODLES AND CHEESE TIMES THREE

8 oz egg noodles, uncooked
6 tablespoons margarine, divided use
3 tablespoons all-purpose flour
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1 3/4 teaspoons ground nutmeg
2 1/2 cups milk
1 cup grated Parmesan cheese
1 cup Swiss cheese, diced
1 cup mozzarella cheese, diced

Bring 3 quarts water to a boil; add salt if desired. Gradually add noodles to boiling water; keep water boiling. Cook, uncovered, for 5 minutes; stir occasionally. Drain.

Meanwhile, to make the white sauce, melt 2 tablespoons margarine in saucepan. Blend in flour and seasonings. Gradually add milk and cook, stirring constantly, until sauce boils 1 minute.

Toss the noodles with remaining 3 tablespoons margarine, then with Parmesan cheese. Add cubed Swiss and mozzarella cheese and toss lightly. Turn half the noodles into greased 3-quart casserole dish (or use a 13x9x2-inch dish). Top with half the white sauce. Repeat layers; sprinkle more grated Parmesan on top.

Bake in preheated 350 degree F oven for 25 minutes or until bubbling.
