Yeah, I know it sounds kind of weird, but..
believe it or not, cream cheese on your favorite bread, with sliced green olives is really yummy. Cut off the crusts and cut in 4's to make it look more Luncheon-y-fancy. :)
Here's another one, but I HAVEN'T tried yet. Peel a part of a cucumber, and put in a chopper processor. Mix the cucumber in with cream cheese and spread on your favorite bread. Of course, to both of these you can add whatever you want whether it's tomatoes, radishes, sprouts.
Or, in pita bread, add butter lettuce, red grapes, string cheese, small pieces of apples, raisins and nuts - just about anything. It's very 'cool' and light and tastes so good!
