Oven-Fried Cinnamon Chicken

Yield: 4 servings
1/2 cup all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons paprika
2 teaspoons rubbed sage
1/2 teaspoon salt
1 teaspoon pepper
1 (21/2- to 3-pound) broiler-fryer, cut up
Combine first 6 ingredients in a heavy-duty zip-top plastic bag; add 2 or 3 pieces of chicken. Seal bag, and shake to coat. Remove chicken, and place in a lightly greased 13x9x2-inch baking dish. Repeat procedure with remaining chicken pieces.
Bake at 400F for 40 to 45 minutes or until tender.
