Cinnamon Bars

Makes 8 dozen
2 cups margarine
2 cups sugar
4 cups flour
2 tbsp cinnamon
2 egg yolks (whites are used for topping!)
Topping:
2 egg whites
1 cup sugar
1 tbsp cinnamon
2 cups chopped pecans
(Yes! A total of 3 tablespoons of cinnamon.)
Mix flour and cinnamon. Cream margarine and sugar. Add egg yolks then flour mixture. Press lightly into a 10x15 pan (about 1/4 inch thick).
Beat egg whites slightly and brush over the surface. Mix sugar and cinnamon and sprinkle over egg whites. Sprinkle chopped pecans over all, pressing in lightly.
Bake at 350F for 20 to 25 minutes. Cut into squares while still warm and cool in pan.
Nutmeg may be substituted for cinnamon for a unique flavor.
Notes:
* I suggest that you use the finely chopped pecans. They tend to stay on the cookies better than the pecan pieces.
