Cinnamon Biscuits
alt.cooking-chien/Connie Gallagher/1999
Makes 20-24 biscuits
2 cups flour
1 tbs. baking powder
2 tsp sugar
1/2 tsp salt
1/4 tsp ground cinnamon
1/4 cup cold margarine (you can use butter if you like)
1 cup milk
1/4 cup melted margarine (or butter, if you prefer)
ground cinnamon/sugar mixture to sprinkle on top (about half of each)
In 3 quart mixing bowl, combine the dry ingredients (1st five above).
Cut in the margarine with a fork until crumbly. Stir in milk until the mixture is moistened. (It will be sticky) Drop onto greased cookie sheets using a tablespoon. Leave about 1 inch between drops. Brush with melted margarine. Sprinkle with the cinnamon sugar mixture, more or less to taste (I like more).
Bake in pre-heated oven at 425 Degrees Fahrenheit for 10-12 minutes or until lightly browned. If you use dark colored cookie sheets, use lower time and check to avoid burning the bottoms.
These are good reheated in a microwave on medium for about 30 seconds. They are good with honey, too.
