Apple Cinnamon Bread
rec.food.recipes/Tonkcats/2000
1 pkg. active dry yeast
1 1/4 cup warm water
1 egg
1 pkg. Jiffy white or spice cake mix (one-layer size)
1 tsp. salt
3 1/2 to 4 cup all-purpose flour
2 tsp. cinnamon
1 1/2 cup chopped, pared and cored apple
1/3 cup sugar
1/3 cup English walnuts, chopped
4 Tbsp. melted margarine or butter
Dissolve yeast in warm water. Add egg, cake mix and salt. Beat until smooth. Stir in flour and cinnamon. Could use mixer. Knead on floured surface until smooth and elastic. Place in greased bowl, cover and let rise until double, about 1 1/2 hours.
Punch down and divide in half. Cover and let rise 10 minutes.
Combine apples, sugar and nuts.
Roll half dough to 12 x 8-inch rectangle. Brush with melted butter and sprinkle with half of apple mixture. Beginning with short side, roll up and seal ends. Place in greased 8 x 2-inch loaf pan, brush with more butter. Cover, let rise 1 hour.
Bake 30 to 35 minutes at 375 degrees.
Icing:
1 cup confectioners sugar
1 Tbsp. water or milk
1/2 tsp. vanilla extract or rum flavoring
Beat until smooth and of spreading consistency.
