Recipe(tried): Oyster Sauce Steamed Fish (serves 2)

Oyster Sauce Steamed Fish (a Chinese dish)
Serves 2

1/2 pound flounder or sole fillets, cut in 2 pieces
2 1/2 tablespoons Chinese rice wine or dry sherry
2 tablespoons oyster sauce
1 tablespoon grated ginger
1/2 teaspoon sugar

Place fish on a heatproof platter. Combine remaining ingredients and pour over fish. Place in a steamer over boiling water and steam until fish flakes (8 to 10 minutes per inch of thickness).

(I've also cooked this in the microwave, combining all the ingredients in a glass pie pan. Microwave just until fish flakes, about 3 minutes at 70% power.)
