Recipe(tried): Broiled Salmon with Bacon, Shiitake Mushroom, and Oyster Sauce
Main Dishes - Fish, Shellfish Broiled Salmon with Bacon, Shiitake Mushroom, and Oyster Sauce
Serves 4
1 pound salmon fillet
2 strips bacon, cut in 1" pieces
1 cup diced shiitake mushrooms (fresh or soaked dried)
1 teaspoon minced garlic
2 tablespoons minced parsley
1-1/2 tablespoons oyster sauce
1/4 cup hot water
If using dried shiitake mushrooms, soak in warm water until softened (about 30 minutes), then trim off hard stems and dice the caps.
Broil salmon until fish flakes.
Meanwhile, in a skillet, fry bacon until not quite done. Discard all but 1 teaspoon of fat from the skillet. Add shiitake mushrooms and saut until browned. Add garlic and parsley and saut 1 minute longer. Combine oyster sauce and water. Add to pan and cook 1 minute. Serve over cooked salmon.
(I've also made this by microwaving the salmon, then microwaving the bacon until not quite done, then adding it to the combined sauce ingredients in a glass measuring cup and microwaving that.)
