Recipe(tried): Paella Ingredient Quantities

Hi Gina -

I can only give you what we used for 8 people - this thing just keeps growing into a pretty big dish, quantity-wise.

8 (1 pound) lobster tails, each tail into three sections
6 clams per person of small/medium hard shell variety, not steamers
6/8 large mussels per person
4 large shrimp per person
2 pounds of cod, cut up into small pieces and scattered throughout the dish
2 small frying chickens, cut up into small pieces, for ex. the breast gets cut up into 3 sections.
2 (1 lb.) rings beef smoked sausage, any type (we used Kielbasa), cut up into diagnonal 1-inch slices
4 large peppers, coarsely chopped (I used three green & one red)
3 large onions, coarsely chopped
1 pkg. frozen peas
LOTS AND LOTS of chopped garlic!! Personal choice
LARGE can of College Inn Chicken broth
1 small can of diced tomatoes
1 (16 oz.) box of Uncle Ben's converted rice
Salt, Pepper, Garlic Powder (yah, more garlic) to taste.
About ten or twelve shreds of saffron

This is started in a large lobster pot or pot that will hold the majority of these ingredients.

Pour olive oil or regular oil to cover the bottom to sautee the peppers, onions, etc, then when you remove the veggies to hold on the side while frying the chicken and kielbasa, you may want go add a little more oil, but it can get a little too much oil when you re-join the ingredients - we took a turkey baster and pulled off lots of the extra oil - since the kielbasa contributes grease, too.

We could have used even another half box of rice, although then it wouldn't have had that wonderful juice to sop up with the crusty bread!

I think that's all - when I go back and re-read my original post, it may jog my memory as to other ingredients, and I get back to you if so.

It was just FUN - it takes a while, and of course, everyone has a long handled spoon, guys included, to help stir things in the pot - at one point the guys were laughing at the picture of four women standing around this steaming pot stirring - they were quoting "Toil Toil, bubble and boil" So there's down time to sit around with some appetizers and a glass or two of wine and just enjoy each other's company - it's a great group activity.

Last year, we did the same thing with the same group making individual grilled pizzas where everyone, including the guys had to roll out and "Top" their own pizzas and grill them - good group activity and pretty funny to watch!
