Pasta:Spaghetti with Lemon, Garlic and Spinach

This is a recipe from a magazine.
Serves 6

3/4 lb spaghetti
6 cloves garlic, cut in the shape of a dime
4 tbsp capers
1 tsp dried red chile flakes
4 tbsp fresh lemon juice
2 tsp freshly grated lemon rind
4 cups chopped spinach
pinch of salt
1/2 cup freshly grated Parmesan cheese
freshly ground pepper.

Cook spaghetti according to package directions.

Meanwhile, place oil in a large skillet on medium heat. Add garlic, capers and chile flakes and cook for 2 minutes. Add lemon juice and rind and cook for an additional 2 minutes.

Drain pasta. Add pasta, spinach, and salt to skillet. Toss well, add parmesan cheese and freshly ground pepper.

Sounds like a nice red burg/merlot wine would be good with this or if you don't drink wine there's an excellent brand called RED VINES.
