Recipe: Peach Salsa (with tomatoes)

Peach Salsa

Here's a recipe for peach salsa that was in our paper today (7-26-95); suggested is serving it over broiled or grilled chicken and rice:

Vegetable cooking spray
1/2 cup chopped onion
1 (14 1/2 oz.) can whole tomatoes, drained and chopped
2/3 cup diced peaches
1/2 cup peach preserves
1 cinnamon stick
1 Tbsp. chopped fresh cilantro or 1 tsp. dried cilantro
1 tsp. chopped fresh ginger root or 1/4 tsp. ground ginger
1/4 tsp. salt
1/8 tsp. pepper

Spray non-stick pan with cooking spray. Heat over medium heat until hot. Add onion; cook and stir for 3 minutes. Add the rest of the ingredients. Bring to boiling; reduce heat and simmer uncovered 20 to 30 minutes or until sauce thickens, stirring occasionally. Keep the sauce warm until serving time. When ready to serve, remove and discard cinnamon stick.
