PEANUT BUTTER MUFFINS
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/4 cup white granulated sugar
1/2 cup brown sugar
1/2 tsp. salt
1 cup buttermilk
2 eggs, beaten
2/3 cup chunky peanut butter
1/4 cup butter, melted and cooled
2 tsp. vanilla
Preheat oven to 350 degrees F. Grease muffin tins.
Mix dry ingredients in a medium bowl.
In another medium bowl, whisk the buttermilk, eggs, peanut butter, butter and vanilla.
Make a well in the middle of the dry ingredients and mix with a few strokes as possible. Don't over mix. Spoon the batter into the muffin tins.
Bake for 10-15 minutes or until done.
Makes 10 muffins
