Good Morning. Connie yes, you may call me Cass, that is my name. No, I have never taught baking I just enjoy helping those who are trying to do better & ask for help.
Anyway my friend, I will post the pineapple recipe for you. I might add consider applying this recipe to the base of the custard about 1/2 inch max. If so considering, you must then slightly change the recipe you must place the pineapple in the food proccessor & give a twirl or two to make them smaller Insert a small amount of the syrup only. It cannot be too loose. Place same in base & pour custard over the pineapple. Remember it must be slightly dry.
PINEAPPLE FILLING/TOPPING FOR LINDY'S CHEESECAKE
2 cans (8 oz each) crushed pineapple in syrup, do not drain
4 teaspoon cornstarch
2 tablespoons granular sugar
2 teaspoon lemon juice
2 drops yellow food coloring (OPTIONAL).
Drain syrup from pineapple and mix in cornstarch and blend well.
In a saucepan place all ingredients and bring to a boil stirring constantly. Boil for approximately 45 seconds to 1 minute till thickened and clear.
Cool, Then spread on surface of custard
