Quince Pie - Substituting Quince for Apples in Pie

Use a reliable apple pie recipe EXCEPT cook the peeled/sliced quinces in a vegetable steamer for about 12-15 minutes to soften and bring out flavor. I also like to substitute allspice for cinnamon in the recipe, and sometimes add a bit more sugar if the quinces don't have as much as normal apples.

Use a standard apple pie or tart recipe and replace half of the apples with quince slices boiled in syrup. I make a simple (brown cane) sugar syrup, flavor with 1 vanilla bean and let the (peeled) quince slices simmer for 30 minutes, then use them on the tart / in the pie. For a more quince-y flavor you could add the quince peels to the syrup (really nice).
I make apple and quince pie using apple and (soft) quince slices in alternate layers. Strain the syrup and boil it down until it is rather thick - heavenly on pancakes.
