Recipe: Collard Greens Quiche
Breakfast and Brunch Collard Greens Quiche

3 cups cooked chopped collard greens*
1/2 lb. Cheddar cheese
1/4 lb. Colby cheese
8 oz. sliced mushrooms
12 oz. cottage cheese
6 eggs
1 tsp. salt
1 tsp. pepper
*Trim the heavy stems off and lightly chop the greens. Simmer in a large pot in water seasoned with salt and pepper until tender.
Mix all ingredients well in large mixing bowl. Lightly oil a Pyrex baking dish or quiche pan. Pour mixture into the baking dish. Bake for 45 minutes in a 350 degrees oven.
