Recipe(tried): Salade Nicoise

Earlier today I said I'd post my Salade Nicoise recipe. I really enjoy this as a cool supper in the hot summer months. It even
looks cool. My DH isn't a fish lover so I sub. chicken for him and also no anchovies on half the salad.

Salade Nicoise for 6-8

3 cups cooked and cooled/chilled green beans
3 quartered tomatoes
1 cup of vinaigrette dressing
1 head of Boston or Bibb lettuce,
washed and dried
3 cups cold French potato salad (recipe follows)
3 hard-boiled eggs, chilled and quartered
1/2 cup black olives as in Kalamata, Nicoise or others
12 anchovies
1 cup or so of tuna (not the mushy type)
or canned breast of chicken

A large shallow dish or bowl

Just before serving, season your tomatoes and beans with a bit of dressing. Do the same with the lettuce leaves in your serving dish. Spread out the lettuce to cover the bottom of the dish. Arrange the beans, potato salad, tuna/chicken and decorate with the olives eggs and anchovies. Top with additional dressing to taste. Serve with crusty French bread to clean your plate with afterward. Go ahead pretend that you're in Nice!!!
