Marinara Sauce
4 tablespoon olive oil
1 each onion; chopped
5 each garlic; chopped
2 cans tomatoes, crushed
1 can tomato puree
1 cup red wine
1/4 cup parsley; chopped
1/4 cup basil; chiffonade
Heat olive oil in a large heavy saucepan over medium-high heat. Saute onion until clear, add garlic and continue cooking until garlic begins to turn golden brown. (DO NOT OVERCOOK GARLIC - IT WILL BE VERY BITTER). Add the tomatoes, puree and wine, and bring to a boil. Reduce heat to low and simmer for 1 hour, stirring occasionally. After an hour, add the herbs, test the seasoning and continue cooking uncover another 30 minutes.
NOTE: Great to make ahead and freeze or refrigerate for up to 2 weeks.
