Recipe(tried): Creme Anglaise

Creme Anglaise
milk
4 egg yolks
2 1/2 oz sugar
to taste vanilla extract
1. Bring milk to a boil.
2. In a stainless steel pot add 4 egg yolks, 2 1/2 oz. of sugar a splash of vanilla, and whisk until a pale yellow color.
3. Slowly temper the milk into the mixture, off the heat using a whisk.
4. Once milk has been tempered use a wooden spoon to constantly
stir back over medium heat.
5. Continue stirring until the creme anglaise coats the spoon.
*(a test to remember coat spoon draw a line with your finger the creme anglaise should hold the line made by your finger any drips into the line it needs to be thicker continue stirring.)*
