Recipe(tried): Savory Stuffed Chicken Breasts

These were spur-of-the-moment and they turned out great!

BAKED STUFFED CHICKEN BREASTS

Chicken Breast Halves
split horizontally (not completely thru)
opened like a book and flattened

Stuffing:
Boursin Cheese
Grape Tomatoes, chopped
Kalamata Olives, chopped
Capers, chopped
Basil Pesto, to taste
Mix all together 'til creamy

Spoon down middle of breast
Roll up tightly from long side.
Wrap 2 slices of Bacon around each roll.

Set in a baking dish

375 degrees / 45--50 minutes.
Slice each roll on the diagonal and serve with:

Baked Potatoes
Green Beans with Toasted Pecans
