My Mom made this for special dinners when I was growing up, I think it may be an Elizabeth David recipe. I have made it with flat white filets. It's very simple and absolutely delicious. Because of all the butter etc, it's very forgiving of overcooking.
Sole in White Wine and Herbs
4 small sole
3 tbsp butter
3 tbsp chopped parsely
1 tbsp chopped shallots/onion
1/2 cup dry white wine
fine bread crumbs
salt and FGB Pepper
Prepare the sole
Put half the butter, parsley and shallot in the bottom of a large shallow oven proof dish.
Sprinkle with salt and pepper.
Place sole on mixture and cover with the rest of the butter and herbs
Salt and pepper generously
Pour the white wine over the fish
Cover with bread crumbs and dot with butter
Cook 30 minutes in a 350F oven
Just before serving, place under the broiler until the crumbs are golden.
Serve in the same dish
Garnish with parsley
