Stars and Stripes parfaits

Servings: 5
2 cups cooked rice
1 cup milk
1 cup whipping cream
1/4 cup sugar
2 eggs -- beaten
1 tablespoon butter or margarine
1 teaspoon vanilla
1 cup fresh blueberries
1 cup fresh raspberries or strawberries
whipped cream and toasted almonds -- optional
In a saucepan, combine rice, milk, cream, and sugar; simmer, uncovered for 20 minutes, stirring frequently. Remove from the heat.
Stir a small amount into egg yolks; return all to the pan. Bring to a gentle boil; cook and stir for 2 minutes.
Remove from heat; stir in butter and vanilla. cool.
Spoon half of blueberries into 5 parfait or dessert glasses. Top with half of pudding mixture and half of red berries. Repeat layers. Top with whipped cream and toasted almonds if desired.
