Blackberry Cobbler
Serving Size : 8
1 3/4 pounds fresh blackberries -- (5 cups)
3/4 cup sugar
2 tablespoons all-purpose flour
1 teaspoon grated lemon rind
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
Vegetable cooking spray
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup plain nonfat yogurt
2 tablespoons fresh lemon juice
2 tablespoons margarine -- melted
1 teaspoon vanilla extract
2 egg whites
Combine first 6 ingredients in a bowl; stir gently. Spoon blackberry mixture into an 11 x 7 x 2-inch baking dish coated with cooking spray; set aside.
Combine 1 cup flour and next 2 ingredients in a bowl; stir well, and set aside.
Combine yogurt and next 4 ingredients; add to dry ingredients, stirring just until dry ingredients are moistened. Drop dough by tablespoonfuls onto the blackberry mixture.
Bake at 400 degrees for 30 minutes or until filling is bubbly and crust is golden. Yield: 8 servings (serving size: 3/4 cup).

NOTES : Using nonfat yogurt in the biscuit topping is the key to making this light version of a summer favorite.
