Recipe(tried): Strawberries & Balsamic Vinegar

Misc.

Hi Jackie,

I love the flavor of balsamic vinegar in lots of things, but my absolute favorite is strawberries marinated in a "to taste" combination of balsamic vinegar and brown sugar, and eaten with whipped cream. That is my I'm-having-a-craving-and-I-want-it-now option. A more elegant (read more time and work) recipe I found in Bon Appetit (also on their web site, epicurious.com)

1/4 cup brown sugar
1/4 cup water
4 large egg yolks
3 Tblsp balsamic vinegar
1/2 cup chilled whipping cream
2- 12 oz baskets strawberries, hulled and quartered
2 Tblsp sugar
16 oz pound cake, sliced thinly

Combine first 3 ingredients + 2Tblsp vinegar in stainless steel bowl. Set this over a pan of simmering water (do not allow pan to touch water). Whisk until mixture triples in volume and thermometer registers 160F, about 4 minutes. Next move bowl over a larger bowl of ice and water and whisk sabayon until cool. Beat cream in another bowl to soft peaks. Add sabayon and fold together. Cover and refrigerate.
Puree 3/4 cup berries with 2Tblsp sugar and remaining 1 Tblsp vinegar. Pour into large bowl and add remaining berries. Toss to coat.
Divide pound cake between 6 plates. Top with berries and sabayon. Yum.

There was also a recipe for a marscapone (how do you pronounce this please- it is not in my dictionary?) cheesecake with strawb. and balsamic vinegar at that site that sounded quite good.
